Ingredients:
- 1 sheet of shortcrust pastry
- 2 Monterosa tomatoes
- 1 spring onion
- 1 bay leaf
- 3 eggs
- 1 teaspoon Dijon mustard
- 100 ml single cream
- 1 tablespoon flour
- 160 g grated cheese
- 1 tablespoon of extra virgin olive oil
- Salt, oregano and pepper
Directions:
- 1. Preheat the oven to 200°C. Flatten the shortcrust pastry and smooth it out with a rolling pin.
- 2. Place the dough in the mould where the quiche will be prepared (round, about 24 cm in diameter and shallow). Press with your fingers so the base takes shape and sticks well. Remove any overhanging edges.
- 3. Prick the whole base with a fork and bake for 15 minutes. When it is done, take it out of the oven and leave to cool.
- 4. Put the oil in a frying pan. Add the chopped spring onion, a chopped tomato and the bay leaf. Add salt and pepper to taste. Stir well and fry over a medium heat for about 10 minutes, until the onion begins to turn transparent.
- 5. Remove from the heat, take out the bay leaf and set aside. Crack the eggs and put them in a bowl, beat them thoroughly and add the flour, cream, mustard and pepper.
- 6. Add 60 g of grated cheese and mix everything together. Put some of the cheese on the baked pastry base and add the egg mixture. Chop the other tomato into very thin slices and distribute them all over the surface.
- 7. Finish decorating with the rest of the cheese and cover the quiche with aluminium foil before baking again at 180°C. Cook for approximately one hour or until a knife comes out clean when inserted in the centre.
- 8. Once the quiche is set, turn on the grill and let the top brown for 5 minutes. Serve straight away.

Ingredients:
- 2 kg of Monterosa tomatoes
- 4 fresh basil leaves
- 1 tablespoon of sugar (optional)
- Olive oil
- Black salt
Directions:
- 1. Pour water into a large saucepan and bring to the boil. Wash the tomatoes and once the water boils, place them in the pan for 30 seconds to blanch.
- 2. Remove and peel the tomatoes. Cut them in half and take out the seeds from each one. Chop them into chunks and place them in a wide, shallow casserole dish.
- 3. Add a teaspoon of salt, the basil leaves and the sugar to taste. Leave on a very low heat, stirring occasionally, for as long as it takes for the water in the tomatoes to fully evaporate. This may take 2 to 4 hours.
- 4. Once it has reduced to a third of its initial volume, distribute among different glass jars, drizzle the surface with olive oil and seal them tightly. Keep the jars in the fridge. And enjoy!

- 1. Place the four pieces of cooked beetroot in a casserole dish or tall container.

- 3. Add oil, salt and a little water.
- 4. Blitz with a blender and serve.

Directions:
- 1. Wash and dice the strawberries and tomato and put them in a large bowl with the pistachios and sugar, then stir.

- 1. Preheat the oven to the temperature specified in the pizza base instructions.
- 2. Place the pizza base on a baking tray.
- 3. Distribute a layer of Monterosa on the pizza base.
- 4. Drizzle a little olive oil over the pizza and season to taste with salt and pepper.
- 5. Cook the pizza and try your best not to wolf it down.
Monterosa puff pastry

Ingredients:
- 1 sheet of shortcrust pastry
- 2 Monterosa tomatoes
- 1 spring onion
- 1 bay leaf
- 3 eggs
- 1 teaspoon Dijon mustard
- 100 ml single cream
- 1 tablespoon flour
- 160 g grated cheese
- 1 tablespoon of extra virgin olive oil
- Salt, oregano and pepper
Directions:
- 1. Preheat the oven to 200°C. Flatten the shortcrust pastry and smooth it out with a rolling pin.
- 2. Place the dough in the mould where the quiche will be prepared (round, about 24 cm in diameter and shallow). Press with your fingers so the base takes shape and sticks well. Remove any overhanging edges.
- 3. Prick the whole base with a fork and bake for 15 minutes. When it is done, take it out of the oven and leave to cool.
- 4. Put the oil in a frying pan. Add the chopped spring onion, a chopped tomato and the bay leaf. Add salt and pepper to taste. Stir well and fry over a medium heat for about 10 minutes, until the onion begins to turn transparent.
- 5. Remove from the heat, take out the bay leaf and set aside. Crack the eggs and put them in a bowl, beat them thoroughly and add the flour, cream, mustard and pepper.
- 6. Add 60 g of grated cheese and mix everything together. Put some of the cheese on the baked pastry base and add the egg mixture. Chop the other tomato into very thin slices and distribute them all over the surface.
- 7. Finish decorating with the rest of the cheese and cover the quiche with aluminium foil before baking again at 180°C. Cook for approximately one hour or until a knife comes out clean when inserted in the centre.
- 8. Once the quiche is set, turn on the grill and let the top brown for 5 minutes. Serve straight away.
Monterosa passata
Transport yourself to Italy with this delicious dish from Monterosa

Ingredients:
- 2 kg of Monterosa tomatoes
- 4 fresh basil leaves
- 1 tablespoon of sugar (optional)
- Olive oil
- Black salt
Directions:
- 1. Pour water into a large saucepan and bring to the boil. Wash the tomatoes and once the water boils, place them in the pan for 30 seconds to blanch.
- 2. Remove and peel the tomatoes. Cut them in half and take out the seeds from each one. Chop them into chunks and place them in a wide, shallow casserole dish.
- 3. Add a teaspoon of salt, the basil leaves and the sugar to taste. Leave on a very low heat, stirring occasionally, for as long as it takes for the water in the tomatoes to fully evaporate. This may take 2 to 4 hours.
- 4. Once it has reduced to a third of its initial volume, distribute among different glass jars, drizzle the surface with olive oil and seal them tightly. Keep the jars in the fridge. And enjoy!

Preparation:
- 1. Wash and thickly slice the Monterosa tomatoes, then arrange the slices in a layer on a plate.
- 2. Place a slice of Brie on each slice of tomato.
- 3. Repeat the process to create more layers, alternating slices of tomato with slices of Brie until your tower reaches the required height.
- 4. Add chunks of apple to the top of your tower for a sweet touch.
